How to make Popeye’s fried chicken

Like most fried chicken recipes, Popeye starts with a whole chicken and cuts it into eight pieces.

However, you can simply cover the chicken with hot sauce and curd instead of using complicated seasonings or brine to season the chicken.

After marinating overnight, drain the chicken and cover.

This recipe requires a mixture of eggs, water and hot sauce so that the flour mixture can stick to the chicken.

A good all-purpose flour is seasoned with salt, pepper, garlic powder, and chili powder for the coating-that’s it.

Dip each piece of chicken twice in the egg and flour mixture to obtain a thick layer of bread.

You will fry the chicken in a Dutch oven with your favorite neutral oil heated to 325 degrees Fahrenheit. You can eat directly from the cooling rack.

Ingredients

  • 3 eggs
  • 4 cups flour
  • 2 1/2 pounds chicken, cut into pieces
  • 1 cup hot red pepper sauce (e.g. Louisiana Hot Sauce)
  • Salt, pepper, and garlic powder, to taste
  • 2 teaspoon pepper
  • 1/3 cup water
  • Peanut oil, for frying
  • 3 teaspoons cayenne pepper
  • 1 quart buttermilk, optional
  • 2 teaspoon paprika

Instructions

  1. Place cut-up chicken in a large bowl, and cover with buttermilk. If you have the time, cover and chill for two hours, or overnight.
  2. This is optional, but will give the chicken more flavor and moisture.
  3. In a large bowl, add eggs, water, and red pepper sauce. Whisk until combined.
  4. In a large gallon freezer bag, mix flour, pepper, paprika, and cayenne.
  5. If you marinated the chicken, remove it from the buttermilk now. Sprinkle chicken lightly with salt, pepper, and garlic powder.
  6. Place all chicken pieces in freezer bag with flour mixture. Shake until all pieces are evenly coated.
  7. Remove chicken pieces one at a time, shaking excess flour. Dip each piece in the egg mixture, and return to bag of flour.
  8. After all pieces of been dipped in the egg mixture and put back in the bag, give it a second shake to coat chicken pieces again.
  9. Heat oil in deep fryer or deep pan to 350°F.
  10. Working in batches, drop each piece of chicken into the hot oil. Fry for 15 to 18 minutes, or until golden brown, turning occasionally if oil does not completely cover chicken.
  11. Keep in mind that dark meat chicken takes longer to cook than white meat. Watch your wing segments, as well; these will finish cooking first.
