I must admit that when I first read the recipe and title of the 8 cans of chicken taco soup, I really laughed. Alone in my kitchen.

{Because I am cool. }How smart is the smell? You can add 8 cans of different things together and you will get a very delicious soup.

This is genius! However, I certainly cannot be praised for it. My sister-in-law Judy gave me this recipe, and it quickly became my and my favorite Zachary!

I have a different taco soup recipe that I’ve loved making for a while, but it’s really nothing compared to this.

My old recipe is double the work too! amazing. Under 300 calories per cup, this stuff is great. You wouldn’t think the cup would be much, but I could hardly finish it. It’s very good!

I have a feeling I will be making this soup more often when the winter months enter. Not only does it warm my body, it warms my soul! Enjoy.

Ingredients

  • 1 can black beans drained and rinsed, 15 ounces
  • 1 can pinto beans drained and rinsed, 15 ounces
  • 1 can green enchilada sauce 10 ounces
  • 1 can chicken broth 14 ounces
  • 1 can white chicken breast drained, 12.5 ounces
  • 1 can sweet corn drained, 14.5 ounces
  • 1 can cream of chicken soup 10.75 ounces
  • 1 oz taco seasoning I prefer McCormick mild taco seasoning
  • 1 can petite diced tomatoes drained, 14.5 ounces

Instructions

  1. Mix all ingredients together in a large pot.
  2. Bring to a boil over medium heat and then reduce heat and let simmer for 5-10 minutes.
  3. Serve with tortilla chips.
