Chicken Croquettes Recipe – First cut the onions into small cubes. If a particularly fine consistency is desired, the onions can also be processed with a grater. Heat the butter in a pan, add the diced onions and sauté on medium-high for 8 minutes until translucent.
At the same time, cut the chicken into very fine pieces and then place them in the pan with the onions. Alternatively, the meat can also be processed with a blender. However, this has to be done in portions.
The shredded chicken should then also be seared whitish for 8 minutes without becoming crispy. For a particularly strong taste, a teaspoon of instant broth or a bouillon cube can now optionally be added.
Then use a sieve to sift in the flour and mix well. When a homogeneous mass has formed, milk and broth can be added. Stir vigorously to keep the sauce from clumping.
The mass can then be seasoned to taste with salt, pepper and nutmeg. Then the sauce should simmer for 20 minutes on a medium level. To avoid burning, it should be stirred regularly.
Once cooked, transfer the sauce to a bowl and set aside to cool for 5 minutes. Cover the sauce with cling film to allow it to cool down for the rest of the time.
This should definitely lie directly on the mass so that no skin forms. In order to cool completely, the sauce must be placed in the refrigerator for at least 4 hours. Cooling down overnight is even more effective.
For further preparation, the egg can be cracked open and whisked in a small bowl. After cooling, the mass has a firm consistency. Small portions can now be taken from it with a tablespoon. These are rolled into small croquettes and then rolled in plenty of flour.
Then put the rolls in the beaten egg and roll them in the breadcrumbs. A little salt and pepper gives the breading a spicier taste. If the rolls have lost their shape, you can now improve them a little.
Prepare a pan with plenty of oil or turn on the fryer. Once the fat is hot, fry the rolls over medium-high heat until they turn golden brown.
