  • 300G roughly chopped lean beef, from abdomen or back
  • 150G Pancetta (pork bacon)
  • 50G carrot, finely diced
  • 50G celery stalk, finely diced
  • 50G Onion, finely diced
  • 300G peeled tomatoes
  • 100ml red wine
  • 100ml whole milk
  • 100ml vegetable broth
  • olive oil or butter
  • Salt
  • pepper
  • maybe a dash of cream, depending on the pasta used


  1. Sweat the finely diced pancetta in a large skillet.
  2. Add 3 tablespoons of oil or 50 grams of butter and the finely chopped vegetables (onion, celery and carrot).
  3. Then add the ground beef, sear and stir.
  4. Now deglaze the whole thing with red wine and stir until it evaporates.
  5. Now add the peeled tomatoes and the vegetable stock and let the ragù simmer, covered, for about 2 hours.
  6. Just before the ragù (the sauce) is ready, add the milk and season with salt and pepper.
  7. The Accademia Italiana della Cucina recommends:
  8. “At the end, when the ragù is ready, if you’re using dried pasta, you usually add some cream. With fresh tagliatelle, leave out the cream.”
